There will be 3 categories in which you may compete. Chiles and onions will be provided by local farmers.
Salsa: MUST use Green/Red Chiles or Jalapenos as an ingredient.
Green Chile Dish:
Red Chile Dish:
These can be an appetizer, main dish or dessert and MUST contain Green or Red Chile.
Judging will be based on: Appearance, aroma, taste and aftertaste.
Prizes: There will be 2 categories:
The Professional/Commercial winner of each category shall have bragging rights and a banner to display at their place of business.
**Due to space limitations, limited to 4 or less per team**
Cash and ribbon awards will be given to 1st ($100), 2nd ($50), and 3rd ($25) in each category.
Amateurs must cook on site. Professional/Commercial can cook in their licensed kitchen, but must provide a temperature log when turning in the entry. The entries must be ready and turned in to the courthouse pavilion by 2 p.m.
